Mules pulled pork in a MES 40 with AMNPS with Qview

Getting thing smoked for a birthday party. Thursday I rubbed the 9 LB butt with my rub. Put it to bed in the fridge. Last night I loaded the AMNPS with apple and hickory pellets. I got it smoking real good, set the temp to 230° put the butt in and went to bed.

It smells so good around here. It is at the 17 hour mark with a IT 170°. It had a 6 hour stall

. The pork loin cooked and rested during the stall.

22 hours and still going IT of 190°. That is why I am the day before kind of guy.

24.5 hours later it is resting. As my friend foam has said in the past. About the same time the next day! So now it will rest. Fallowed by pulling. To be served tomorrow.
It is done when it is done!

Time to reheat. Got the pot of water hot . Then dropped the vacuum sealed bags of pork into the hot water. It will be just as moist as when it was smoked.
