I just want to add that as soon as your starter has doubled in size it's ready to use to make bread or pizza dough. You don't have to wait weeks, although it won't have a strong sourdough taste for the first week or two, but it is totally useable.
Houses around here have the water heaters inside the house in a small closet. In the cool months a great place to keep your starter is on top of the water heater or in the oven with just the oven light on.
After a while you won't even have to measure your H2o and flour that you add because you will get used to the consistency that your starter normally is. People get crazy with exact measurements and as long as you're close, and it's getting a full 100% rise you're good to go.
