I'm really enjoying making my own pickled peppers. This time I'm using Cubanelle peppers which are similar to banana peppers. Which is what I've been trying to find with no luck yet. Pretty much the same brine as the Hungarian recipe. Just added a teaspoon of red pepper flakes for a hint of heat.

See if you can get pepperoncini, they are nearly the same thing as your elusive banana pepper.

I grow Hungarian Wax peppers every year. Going to try this next summer for sure.
