Looks good. I smoked some over the weekend and they had very little color change. Smoked for almost 3 hours
 
I've only tried smoking cheese once. I don't think I left it sit and mellow long enough. Wife didn't care for it and cheese is expensive up in Canada so I haven't tried it again.
 
Ready for a long fridge rest.
