Morcon this is a Philippine dish served around the holidays. Normally made with Flank Steak.
I used London broil that I sliced in half about 3/8 s" & then pounded them out to marinate

Marinated for a few hours

The filling gets some Chorizo, Carrots, Olives, & Eggs ( Quail Eggs this time)

They are rolled tied & the ends sewed closed

I make a sauce using Plum Tomatoes, Onions, Garlic
The meat is added to the sauce and simmered till tender, I do this the day before then reheat
After reheating remove to cool before slicing

After slicing they are covered with the sauce I added Potatoes

Richie your Morcon looks great! With the sauce and potatoes at the end, the whole dish looks very hearty and comforting. I’d belly up to a plate of that!
