Hello to all

I'm Mike from Apex North Carolina and I am just starting to smoke. I have a weber smokey mountain WSM.

I am in my first smoke as of this post a pork butt and am very excited I should have a taste in 6 hours from now.

I did run a smoke in session on the new grill yesterday and found out I need to start with fewer starter coals it was running very hot around 295. This first real smoke I am in the 230's so far a few hours in!

What a great learning experience this is going to be!

I hope to share knowledge as I gain it, build new friendships and to enjoy the smoking hobbie a lot,

Ok it hit 200 degrees. It is now resting for 30 minutes. I have pics and will share tomorrow. To hungry to post if you know what I mean. I over cooked the poppers should have listened to my instincts. The corn wad good I think I needed more smoke for the corn but after 11 hours I was limited.

Just so you know since you are new if you post any pics our software will probably hold the post until a moderator can approve it. Just be patient and don't double post it because you don't see it show up right away, someone will get to it! pork butt 7.8lbs and Jalapeno poppers (over cooked should have taken them off earlier) and corn....Not bad for my very first smoke
 
That looks Really Good for a first timer! Nice bark on that butt, I bet it was juicy!
