This weekend I am attempting 2 racks of ribs on my MES30.

What do you guys think:
Baby back or spares?
Best marinade, rub, wood, etc?

I'm thinking 321 or 221 (baby backs) at 225 considering its my first rib smoke.
 
Pick a basic rub that looks good to you and go for it. We all learn by experimentation. I keep a notebook of each smoke. After you fill out 10 to 15 pages you will not only know what you like but you will be able to customize each cook to come out the way you expect it to.
