I've been using my 40" MES all summer and really enjoy it. I'm used to cooking my baby backs on my ceramic cooker at 225 degrees for about 4-5 hours. When I cook the babies on my MES, at the same temperature, they cook very fast compared to the ceramic. It only takes about 2 1/2 hours for the 3 racks I usually cook. I've ben told the ceramic cooked ribs are more tender than the MES. Anybody tell me why?
