Merry Christmas all!

Received one of those cold smoker attachments for my MES30. Can't wait to try it out. Will most likely use it to extend the time between loading chips as opposed to a lot of cold smoking. I realize that I'll have to keep the smoker on the whole time to keep temp but do you think that I can get away with turning the attachment off once the chips are ignited? Does anyone have any experience with this?

I've been using one of these attachments for several years.
My strategy is to turn it off as soon as I see smoke comming out of the smoker. The smoke may be too billowy for the first several minutes, but it settles into a nice thin blue.

Some extra unsolicited advice:

I do not connect the attachment to the smoker as per the instructions. Instead, I separate the units with a 3ft duct.

The chips can stay clogged up in the hopper, so occasionally I stick a BBQ fork in to knock the chips down.

I usually refill the hopper ~3 times over the course of a 5-8 hour smoke.

After several uses, the hopper gets gummed up too much creosote. This affects the smoke smell/food flavor, and causes the chips to clogg more. I burn the creosote out in a fire pit, or a propane torch.

I have one for my 40" and one for my 30". I smoked a 12lb PR yesterday 12/28/2024 it took 5hrs to bring it to 121deg at 230deg plus smoke box heat. I did this in my 30" used a meat thermometer to watch temp after pulling and tenting temp went to 132deg. I put a probe inside smoker temp was a steady 230deg the meat was excellent. My box is permently mounted to my smoker using 1 1/2" alum angle attached with ss self tapping screws.. I have smoked cheese using just the smoker box it does a excellent job, going to try smoking beer can chicken next.
 
You can use a Harbor Freight or Amazon sourced router speed controller to cut down the smoke generation. I usually use mine at half to three-quarter power.
