MES 30 upgrade?

Ok as many know I have the MES 30 with the arbor pid- it works great - for 10 lbs or less.

I’d like to be able to smoke 20 lbs at a time. What would be a good step up and still use the pid?
 
Buy a 2nd mes 30 or a mes 40 and use two smokers. Can find them cheap they say on Craigslist... just not around me lol! If I remember correctly 10 lbs meat in a mes 30 is about the max that works well.

I got a 40 last year and think the 30 is a toy compared to the 40. No experience on cook size but think 20lbs would be doable. Might take a little more time in the beginning (assuming were talking sausage). 40 I got was used but like new on FB Marketplace $100. SS/door with window/ wheels/handle for moving.

There's a few things you could do . One would be a 40 .
Another would be change your method .
Roll smoke for how everlong , then poach finish .

I don't do that much volume in my 30 . Works great for small batches , and improves the end result in my opinion .

Build a plywood box and use this element plugged into your Auber .
