On my 3rd smoke now, the readings on my Mes were around 50 degrees off compared to my probe.

Masterbuilt sent a new digital controler(2 days),now ONLY 30degrees off! to the low side.

I give up! Sent for 732,being I only have 1 probe now, figured TJ says its good must be,because the AMZN from him

is one smokin bitch, work flawless. Figure out the temp ratios and go with it,I guess.

What happens if you just shut the probe wires in the door, instead of vent? Mess up seal?

Thanks for all your input, this site has cut my learning curve by YEARS !!!

My Masterbuilt is off also.  If I set my controller to 275° the temp on the racks have hit 300°.  I usually set me controller about 220° to achieve 250° on the racks and 198° to achieve 220° on the racks.

The probe for the MES is in the back corner.

Your MES Meat Probe should be fairly accurate +/- 1-2 degrees.

Other MES users have posted their differences.  I NEVER trust the digital display, and use my Maverick to keep track of temps.

I usually set mine at 230 and then run it up or down by the readings on the Maverick.

It takes mine an hour or longer to warm up all the way so it takes some time to set the temp and forget it.

Same here MES temps are off about 15 degrees from probe. I set mine at 210 to run at 225. Yes you can close the door on your probe wires without hurting the seal or the probe wires.
