Got up this morning and had a hankering for smoked meatloaf. Why not? 3 pounds of 80/20 with 2 eggs, SPOG, and bread crumbs, and, worsy sauce all mixed up. And into a foil pan.
Then gave it a blanket of thick cut bacon. And a healthy dose of Pitfaced on point seasoning.
Smoked with comp blend until the IT hit 150. Then finished to 160 in the oven to crisp up the bacon. Sorry, no build pics.
Came out fantastic. And I know what I'm taking to work!
