Doing some pork carnitas today.

Have a boneless, split and salt, pepper ready.

Got some coals going in my Meadow Creek PR36

Using my AMZNPS with hickory pellets. Starting the pellets with a chunk of coal.

Took the pork from the grill.

Put in slow cooker with carnitas seasoning. Slow cook for 6-7 hours covered.

Place all the carnitas and liquid in a baking dish and put in oven with broiler on at 400* for 30 mins to crisp up the pork.

I added 4 Tbs of flour to the liquid in the slow cooker to make a roux, re seasoned and placed the carnitas back in the cooker for another hour. The roux will thicken

Serve over rice or in a tortilla.
