camping this weekend and here is sat night main dish. cooked over hickory and cherry burnt down to coals.
seasoned 6 thighs with smoked paprika, salt and pepper and smidge of mustard powder and cayenne, then sauteed 3/4 of way done.

then sauteed mushrooms, sweet peppers, onion and garlic in pan juices then added a big pat of butter and flour. went maybe a minute like that.

then added roughly cup and half of this wine.

went maybe 15 or so reducing then added marsala wine and chicken broth and thighs back in

went about 15 more thickening up then plated with fried okra

That's an unusual combination of flavors. How did it turn out? The chicken looks good...JJ
 
looks good, whatever happened to hotdogs on a stick stuck in the fire. I got to get back into camping😉
had the dogs for lunch. camping is our splurge time. swiss rolls and all, lol

it turned out really well. the orange wine gave it a different flavor and the chicken was as moist as i ever had. most importantly wife was happy

So did the rest of the wine go with dinner or are you saving it for the next camping trip?
 
Very interesting "twist" to the traditional chicken marsala.

when you got okra in the garden you eat okra and often, lol. probably have had it as a side for breakfast at some point.
yes wine was finished off. actually went well with it to me but i really like orangey stuff
