Maple Chipotle Chicken; It's what's for dinner!

I had thawed some chicken breasts over the weekend to make Cream of Chicken and Wild Rice soup for the misses who hasn't been feeling well. After making the soup, I found I had a couple breasts left over.

Yesterday, I was in the mood for something slightly sweet and spicy. Remembering the thawed chicken breasts, I looked through my spices and pulled out some chipotle powder. I really like the smokey heat that chipotles have. Hmmm, an idea is forming.

I threw the breasts into some brine and in the frig for a couple hours while I worked out the details.

I had made some soft sourdough hamburger buns on Sunday for burgers.

Created a chipotle rub for chicken. There is no salt as the brine had salt in it:
  • 2 parts chipotle powder
  • 1 part garlic powder
  • 1 part onion powder
  • 1 part black pepper
I decided to use the Smokin' It as it was a small cook and I expected it to go pretty quickly. Besides, I knew the smoker was feeling a little lonely as I had been using my new Louisiana Grills smoker all summer and it was time to give it some love. So, I stuck the chicken in the smoker with a 50/50 mix of hickory and apple. Basted every hour with some Vermont Maple Syrup. After about three and a half hours at 250, I pulled out these beautiful babies with an IT of 155.

I quickly whipped up some french fries in the air fryer and put together a tasty dinner.

The buns were great. The chicken was slightly sweet with a bit of heat to finish off each bite and very juicy. I think I'm going to call this one a success.
 
Looks really good

I picked up some chipotle rub and mixed it with a hickory rub and used it on a pork tenderloin. It was really good.

Wish I would have thought about using maple syrup to baste it like you did with your chicken.
 
I am shamelessly going to have to steal this idea! I wanted to fire up the smoker this week just for some thing quick..this might be perfect!
