Mama's Sunday Meatloaf...

Every once in a while here, we crave a stuffed meatlof for our Sunday dinner- (Smoked Meatloaf, of course!) 

Following is a brief pictorial showing  Mama's Method - (Mrs. Tony) of how it starts and how it looks just before going into the 'Fridge smoker...

Equal parts, beef, pork and veal for the meat mix- first layer of smoked Black Forest ham, sliced thin-spinach leaves (stems removed!) sliced provolone and a finish topping of imported shredded Mozzarella.


Next is the Roll-up procedure -not for the novice if Y'all ain't tried it! lol...


Roll-up complete and now for the requisite tucking in of the end flaps to prevent the dreaded " Cheese Outbleed" ...


Rolled and tucked...Ready for some rub and smoker time...


Outa' the "Fridge smoker at 165 internal and set to rest before slicing and serving...



And the fruits of Mama's Labor- (Hey, My end wasn't too shabby either!) lol


Served with a side of mashed potatoes and brown gravy, biscuits and butter and an adult beverage of choice for this meal...


And that was Mama's Sunday Stuffed Meatloaf Dinner as it happenned...
