I'm seeing more of the tubed casings being used. I tried them and they are easier than messing with non tubed.

OMG!!!!  Those look amazing!  Making me hungry for some of my Grandma's (Naw 'Lins style).  I am at work just sitting here drooling...but eating boiled peanuts.

That sausage is great in Red Beans and Rice too!

My wife would really appreciate a decrease in cussing time. I'll be ordering tubed casings next time. I usually just buy them in a big bag.
 
The Red Beans recipe looks yummy to me!  I make mine in a crock pot...go off to work. Get home make rice and corn bread....good to go!  It's better the next day too!  My Hubby said he married me for my fried chicken and red beans and rice.

I started making sausage with the main goal of making andouille..

This batch is exactly what I was looking for..

A quick check of the freezer shows it may be close to making some more time!!!
