Are there any recipes on here for smoking bacon that does not use any sugar or sweetener?

The last batch I made used sugar and it was really easy to burn the bacon in the frying pan.

Greg, evening.....  Salt and cure# 1 is all you need..... You can add garlic, onion, black pepper etc..... sugar is not a necessity... The general public seems to lean toward sweet things so sugar is added for the sweet tooth....

DDF has put together a great calculator.... you can change stuff to suit your needs.....   156 Ppm for Cure# 1 is a very good place to start...  2% salt is what I use in most cures and on fish etc......  The final numbers may not add up because the calculator takes into account the salt in the cure so you actually end up with 2% salt in the bacon...  example:  10,000 grams of meat.....    24.96 grams cure# 1.....  salt 176.6 grams......    So you can see at 2% salt, the accounting for the cure has been taken care of.....   Dave

Greg, It is a starting point.... If you weigh all of the ingredients and add them to the meat based on percent by weight.... you can adjust ingredients, in the future, with a fair amount of accuracy instead of hit and miss......    How much salt do you add now, to meats when cooking or smoking ??   Dave
