Mailbox mod with water pan?

Hey guys, I haven’t posted in a while, nor have I smoked much more than a couple of rib racks, but I read a lot and had thrown the idea of a mailbox mod for my MES.

Now I should preface this by saying I’ve never had an issue with bitter flavor from my amazen but I read where some had. I also saw where people put bends in there aluminum ducting to sort of “condense” creosote before it makes it to the smoker. Mostly I’m bored and my thinker started spinning.

Maybe this has been addressed before but i couldn’t find it but would it be of any benefit to put a water pan in with the mailbox mod? I know in past research I’ve read moisture causes bad stuff to stick to meat thus causing poor flavor and having a water pan in the smoker leads to excess moisture on your meat, etc.

Would a water pan in the mod act to maybe “purify” the smoke a little before it leaves (think same idea as a water bong ) or would the excess moisture just put your pellets out? I don’t know how hot a mod actually gets, ie would it be hot enough to make steam and effectively cause the same issue with bitter meat further down the line?

Again, completely trivial idea, except for the sake of conversation. And i have very little real experience with any of the above, it’s all reading others findings and making my own hypotheses.

Edit:I should add, in my mind I see this working with a bigger mod box, like a Webber grill with a fair sized grate to accomadate both smoke maze and water pan

It sounds interesting. I'm curious to see what others think, maybe tallbm tallbm or someone who's into mods and the science of it.

It seems like the water, placed in with the smoke maze, wouldn't get hot enough from the smoke maze to cause steam, but I don't know.
 
The MES is so well insulated that you don't need to put water in the pan.
There is enough moisture from the meat that the chamber stays moist without the addition of water in the pan.
If you want to use the pan as a heat sink, then fill it with play sand or lava rocks & cover that with foil.

I think he means put the water in the mailbox , ahead of the smoker ,,, you know ,, like a bong . LOL .
 
Not sure you'd get any benefit going that route(water in the mailbox). As for the bong affect where would the suction come from?

Note: I used to watch Cheech and Chong movies no personal experience.

Right, it wouldn’t be exactly like a bong (no personal experience here either) but still may act to collect some impurities.

Not something I care about doing either way. Just curious what the pros thofht
