Made a nice batch of Polish sausage this weekend.

It was a bit chilly on Saturday so I decided to make some sausage and my wife like kielbasa so guess what I made.
I made 15 lbs and it came out really good. I used a mix I got from Cabela's.
Pic 1 is the shoulder all sliced up and ready to chill for and hour or so.
Pic 2 is the shoulder all ground up
Pic 3 is the sausage all stuffed (sorry no pics I was doing this by myself and did not have someone to take pictures)
Pic 4 is the smoker all loaded up the next morning after the sausages sat over night in the fridge. Started teh smoker at 120° and bumped it up each hour to 170° until the IT was 155°
Pic 5 is the finished sausages
Pic 6 is a sliced shot
Pic 7 is all wrapped up in packs of two.
