. I wanted to make low carb. I kind of winged it but turned out really good. This what I ended up using.
3 cups Red Pepper Diced
10 Jalapeno's Diced
1/2 cup vinegar
1/2 water
3 cups Allulose/Monkfruit blend
6 Tbsp Ball Low Sugar Pectin
That food chopper works great for stuff like this. Added liquid and half sugar to peppers. Boil for 10 minutes. Added pectin to other half sugar and slowly stirred in. Brought to boil that cant be stirred down for one minute and filled jars. Flip jars while cooling to keep peppers distributed.
Thanks for all the suggestions on what to do with jalapeno's. Did some pickled and fermenting some for hot sauce. Also made some ABT's. No pic but I used some smoked cheese from couple years ago. Friends say they like the plain cheese the best and they sure a lot easier to make. Still have more peppers. Also made up some Breakfast sausage. Was needing some to make Over The Top Chili
And two jars of Keto Cowboy Candy. The rest will be used for more ABT's. Thats a wrap
