Lots of Salmon Tails

Our poor Salmon freezer is working overtime this season. Need to make room, so I thought smoking some tails to give away will help the cause. Here's a dozen tails and 3 filet who volunteered to help the cause.

Dry brined for 7 hours in a simple brown sugar/non iodized salt mix. Room dried for a couple hours and then into Mr. MES40 for 4.5 hours

Buddied them up on a couple racks while cooling down, so I could wash the other racks.....

Oh and here's the one I blame for all this mess. My way better half bringing in another one earlier this week. And we're going out again this coming Sunday? WTF!!

Man, all of that looks fantastic!! Kudos to your wife for keeping the freezer(s) stocked. Now all you have to do is cook...and keep posting of course :emoji_wink:

Thanks for the kind words. Thawing out another 8+ pounds of Salmon to turn into nuggets as my inventory is getting kind of low, since we give so much away, to make room for more fish in the near future.
