Looking for ideas for big meat cuts to do on the Blackstone

Taking a few days of vacay and there is no grill at this place...just a 36" Blackstone.
I realize using a Blackstone is not smoking-meats and this is "SMF" - but - over the years I have seen some posts on Blackstone and it seems the experts are located right here at SMF.

I am tired of smash-burgers and stir-fry and I am looking for ideas for big meat cuts to do on the Blackstone.
I do have a 9-inch bacon press and a dome to use. I can also use a cast iron skillet as as an emergency, back-up press.

Thinking boneless pork-steaks or country-style pork-ribs might be good?
I saw a Tomahawk Steak post that looked really good.
Wondering about chicken thighs or breasts.

A little guidance would be greatly appreciated!

I want to try a steak soon. I think you can do about anything on one. Over the 4th, we did smash burgers, phillies and breakfast hash.

100 % on both , but boneless skinless thighs are great on the Blackstone .
Don't leave out Brats or any type of sausage .
I do potato pancakes and Bratwurst on mine . Need something to use as a dome and a water bottle to steam them after you get some color .

For 'big meat cuts,' classic bistecca alla fiorentina works on the griddle just fine. Make sure the griddle is fully up to temp, work some salt and just a little bit of olive oil into the surface of the steak (porterhouse, preferred), hit all sides until char and add some rosemary sprigs and lemons (cut side down) or cherry tomatoes, serve.

Chicken, I'm thinking yakitori (skewers) or hibachi chicken fried rice, but if that is a little too reminiscent of stir-fry, you can also go Portuguese-style with a piri piri sauce (Chicken Mozambique) or Indian-inspired (the dome is a far cry from tandoori, but the magic is in a good sauce).

Big griddles always get me thinking diners or other short-order restaurants, too, so grilled cheese, ham & eggs, birria tacos, hash brown omelets, Italian sausage or Philly cheesesteak sandwiches...
 
uncle eddie, look for Bruce the Alligator Man's(from Swamp People) blackstone cooking videos on uTube.
He has several creative cooks to look at.

Spicy Pork belly would work well, cut into 1 finger thickness, bok choy sliced in half and grilled goes great together.
Pork tenderloins, 5 minutes per side should get it to the right temp. (There are 4 sides) I’d go home fries with this, but it’s just a suggestion.
 
Fajitas!
Beef, Chicken ,Shrimp Yur Call!?
Add onions ,peppers, Spices
Even heat up the tortillas !
Can make some Dino Eggs Appys ? ( Bombs they call them ? ) Leftovers for a snack ?
 
We've done steaks and pork chops on the griddle. You can get a great sear on them. We also do Reuben sandwiches on it too

Get it blazing hot 🔥, a dab of beef tallow then RIBEYE!!!🥩

Slap it down. Dont flip until it loosens by its self. Wiggle it you'll know when to flip. Amazing crust! cook to your IT liking.

Made pork steaks and fried baked potatoes on the Blackstone
Wife and son loved them but they did miss the BBQ flavor a bit
I personally was pleasantly surprised and have some things I will do different.

Cut the pork steaks a little thinner
And
Low temp is still too hot IMHO…will light every other burner
