I am looking for a simple pork sausage - breakfast sausage patty recipe.

For store bought, I do like Jimmy Dean - Hot, Regular and Sage.
I would love to get the flavor profile close to one of ^^^these^^^

I usually make 2 to 5 pounds at a time if that makes any difference.

do a search for pops breakfast sausage it is highly recomended.

This is a bit of a spoof on Jimmy Dean original breakfast sausage. I've made tons of it and we love the stuff. It is great to make patties with and also for sausage gravy. If you like sage (which we do not) just add a little to this.

16 ounces ground pork
1 teaspoon salt
½ teaspoon Garlic powder
½ teaspoon dried parsley
½ teaspoon fresh coarse ground black pepper
½ teaspoon crushed red pepper flakes
¼ teaspoon ground coriander
¼ teaspoon Accent
¼ teaspoon Oregano
¼ teaspoon onion powder

This is per pound so it's easy to calculate amounts per pound regardless of how many pounds you're making.

This is the recipie I use:

Pork - 1kg
Salt - 18g
Pepper - 2g
Sage - 2g
Nutmeg - 0.5g
Ginger - 0.5 g
Tyme - 1g
Cayenne - 0.5g

To JimmyDeanize this recipie, I'd add sugar (0.5g?), vinegar (15ml?), and MSG (1g?) Since those are listed on the ingredients list.

I use the Hot pork sausage from TSM . It's our favorite . Has good heat and yes I think the sage is good . At least for us .
I recently used the breakfast sausage mix from Owens BBQ . It's a good sage sausage .

Gonna order some. I out of breakfast sausage. Was going to do some more AC Legg but will try that.
 
Brian , I wanted to link the one I buy . I think it's the same SmokinAl SmokinAl uses .
They have one called mild hot , but this is the one I get .
That's on TSM site , but if you have Prime try getting it from there . I buy all my stuff from TSM thru Prime .

Sounds good to me. Those are what I added to Pop's athough I might suggest lemon juice in place of the vinegar for the citric acid.

I was wondering . The one I linked I bought awhile ago . When I went to buy more the " Pork sausage hot " wasn't listed , but the morning edge was . Now the hot says out of stock .

This is an Oldie but Goodie from Diggingdogfarm. I've made this quite a few times. Its similar to National Brands.
Reminds me, we are out of Breakfast Sausage. We switch between Jimmy Dean and Bob Evans. Both are tasty...JJ
