Labour day long weekend here in Aus and of course, any excuse to fire up the smoker will do! Today its pork butt 7# smoking at 250F with hickory and oak and some mangrove lump on the UDS. Went on at 7am, just foiled at 170 and taking it through till its probe tender
Rubbed down the night before with a mix of pink salt, paprika, dark brown sugar, cumin, onion and garlic powder, tumeric and a touch of kashmiri chilli
Injected with apple juice, apple cider vinegar and some maple syrup
