Labour day long weekend here in Aus and of course, any excuse to fire up the smoker will do! Today its pork butt 7# smoking at 250F with hickory and oak and some mangrove lump on the UDS. Went on at 7am, just foiled at 170 and taking it through till its probe tender

Rubbed down the night before with a mix of pink salt, paprika, dark brown sugar, cumin, onion and garlic powder, tumeric and a touch of kashmiri chilli

Injected with apple juice, apple cider vinegar and some maple syrup

Some good ol Q view of before, will update with pics when shes done

When you say "pink salt" are you talking about Himalayan or curing salt?

himalayan pink rock salt, ground to a powder with the mortar n pestal

Also, The wife always collects the bones after and makes a big pot of stock

The pink Himalayan is good salt, its whats in my salt cellar on the counter now.
