Greetings

Just introducing myself. I've been grilling/smoking for about 12 years now and have used this site countless times to save my bacon (literally). I figure it was about time to sign up.

Where I am in Ontario, Canada, smoking season only lasts a few months so I've built up my gear slowly over the years with "budget conscious" grills and smokers (translation; I'd love to have the $8000 rig you need to tow around with a truck but can't justify it with a 6 month season). I started off with a Weber 22-inch kettle which I still use. I added a Char-Griller Pro with side fire-box, then a Weber 22-inch Smokey Mountain and last week, got the Dyna-Glo 1890 wide-body vertical smoker.

I mostly smoke for my family of four but have done the occasional party with 20 or so guests. Next week, I'll be doing a party at work for around 80 people which is why I added the Dyna-Glo wide-body. Also the reason I finally signed up as I'll be seeking a bit of advice leading up to next week.
