We live by the Kentucky bourbon trail. I went to our local distillery Boundary Oak and asked if they would sell me some barley. He said sure how much, Just couple cups. He came out with barley mash which was good. I asked again how much? He said nothing, even gave me the mason jar. They are going to get a couple sourdough breads.

I ran thru my wonder mill and got some nice barley flour.

Mixing up a sourdough jalapeno/cheese for the distillery folks. The cheese is cheddar that I cold smoked 3 years ago with sassafras wood pellets. The flour is a mix of 375g central milling organic BF and 125g of the barley flour from the distillery.

Thats pretty cool! I envy these ideas, tough to get right for me.
 
Vac sealed. I have had vac sealed smoked cheese for 8 years in the fridge. I used to wax and vac seal but the vac cracked the wax at times.
 
Again, cheese would not last that long in my home. It gets smoked, it gets eaten, it gets repeated.
I was pretty sure I knew where you were going with it. It isn't the storage method more so the temptation situation.
I haven't done smoked cheese in a long time but recently I have added the tools to do certain things such as cheese. Eventually there will be a post and it kind of has a funny story to it. Just waiting till I get everything rolling so it the main part gets posted at one chunk.
