I had a 13 lb butt and a 13 pound brisket each in aluminum pans rubbed and covered with plastic wrap in the fridge since midnight and there was about a cup to a cup and a half of juice in the pan. I injected them both with more juices and added more rub to recover them. I have always just wrapped with plastic but this time I had used some pans because I didn't have enough wrap. Do you think they will get dried out?

I don't think the rub pulled the liquid out more likely it just leaked back out of the holes from the injector, i have seen this happen before. Maybe Pops will have more to add to this. Oh JJ is here too, maybe he has some input.

I would ask if the Butt was natural or as some are these days Enhanced, that is, injected with a brine from the factory it adds useless weight to increase the price. I am not aware of anyone selling Enhanced Brisket. If you have a fair amount of Salt and/or Sugar in you Rub you will get liquid, especially if it was Frozen. I have to say 1 1/2 Cups is more than expected but some of it will be reabsorbed as the salt goes into the meat. Your injection will add moisture so I suspect your outcome should be fine...JJ
