leftovers what to do with them?

I have quite a bit of left over PP and some Beef from a pretty good size smoke and would love tuse it in some other meals. I was looking for some recipes or ideas either i don't know where to look or they are scattered around the site does anybody have any ideas? Thanks in advance.

I have done the enchiladas with left over brisker and the turned out awesome but never thought about pork enchiladas i'll have to give them a try. Thanks for the ideas.

I have made pp enchiladas that were awesome and one of my favorites, another I just tried a couple weeks ago was making fried rice with it and that turned out great.
 
Oh man the pizza sounds like its wonderful im gonna give that a try real soon, of coarse all them sound amazing. It would be nice to have somewhere around here to gather all these recipes and keep them archived. Thanks all for the suggestions.

I really like to make fajitas with the leftovers after marinating both the beef and vegetables (in separate bags) in Pace Garlic & Lime Verde Salsa with a little tequila, then throwing them on the grill to warm them up and mix them onto a single platter to make the fajitas (with bowls of shredded cheese and whatever else you'd like to add. They come out great and my family loves them. 

I also have tried a slightly more bizarre set of recipes with left over pulled pork. Normally I make enchiladas or pulled pork pizza with BBQ sauce and whatever mix of cheese, peppers, etc you'd prefer. I also have found a couple recipes for pulled pork gumbo. This month's Chilihead magazine has a pulled pork gumbo recipe and there is another one here. I really like and it adds a nice smoke flavor to the gumbo.

I'd love to know more about the Gumbo recipe the link wouldn't work for me.
I think the next time i do beef i'll make sure to make enough for leftovers to make fajitas (i love fajitas) i bet the are awesome, do you use a certain cut and do you leave it not fully cooked because i'm assuming you don't want it pulled. Thanks for your input on the recipes.

Use the pulled pork or the beef and make a mcrib sandwich..........They are awesome home made...................
