Leftovers are good!!!

I had plenty of the boneless beef ribs left, so got creative with 'em. I shredded some of the beef, grated some cheddar, put it on a bed of lettuce on a big tortilla and topped it with ranch dressing. One with sour cream was mighty tasty also!
