Strange how things happen.

Now, you southern folk are going to find this hard to believe, but all my life I really thought that there was no such thing as sweet potato pie.

I just thought it was a cute line in a country song.  Well lately, I've been hearing more and more about this, and just lately tropics posted about serving sweet potato pie to guests and how much they loved it.  I started thinking about the zucchini muffins my SIL makes and thought OK, why not sweet potato pie.

So.........I PM'd Richie and asked him if he would share his recipe.  He not only shared, he included a lot of tips and advice, and told me I should combine it with Foam's pie crust recipe.  Since I've never been able to make an edible pie crust, I decided to wait til next time on the crust--one thing at a time.

Off to the store for sweet potatos (we call them yams up here) and some Tenderflake uncooked pie shells.

Now Richie had told me that he cut back on the sugar in the recipe, but both Miss Linda and I have pretty large sweet tooths.  I decided to make two batches, one with Richie's less sugar, and one with an extra 1/4 cup each of white and brown sugar.  I had no Idea how many sweet potatos to cook, so I boiled up lots and froze the excess for quick meals later.

Got the pies all ready and baked.  While they were cooling, I whipped up a batch of cinnamon/nutmeg whipped cream.

Side by side taste:

Well I'm here to tell you, it only took  one bite of the pie at supper time, and both Miss Linda and I were lost.  Sweet potato pie instantly became one of our favorite deserts.  It was fantastic!!!   Makes me want to cry when I think about  all those years I could have been eating sweet potato pie and didn't.  As it turned out, both Miss Linda and I preferred  the sweeter version, but believe me,  none of the second pie went to waste.

My advice?  If you've never eaten Sweet Potato Pie--try it, you'll probably like it.

Thanks Richie, for a fantastic recipe!!!!!

yell man what you have been missing and in my neck of the woods we also make sweet potato biscuits.  If you want another great pie in our neck of the woods we also make a great white potato pie when we didn't have money for sweet potatoes. If anybody wants I will post recipe for white potato pie.

Thanks Al.  If you PM Richie, I'm sure he'll send you the recipe.  Since you like sweet things, I do recommend adding 1/4 cup each of white and brown sugar to his recipe.

Thanks Richie.  You're the one should be taking the bow--its your recipe.  I just followed instructions.  Might I suggest you post your, now award winning, recipe??

Gary

Some folks who say that there's no difference between Sweet Potato pie and Pumpkin pie have never had any really good Sweet Potato Pie. It's a staple in SC.
Ain't that the truth, Joe.  It might look like pumpkin pie, smell like pumpkin pie, and have the same texture as pumpkin pie--but it sure ISN"T pumpkin pie--hands down better.

OK HS. now you got me curious.  I wouldn't mind the recipes for both the biscuits and the white potato pie.  You folk are going to make a southerner out of an Alberta redneck if you keep this up.  I already love grits, and biscuits and gravy.  LOL

Gary you could have posted that,I like sharing so here it is. Oh I like to use just a fork instead of making the puree to smoth

Sweet Potato Pie

Ingredients
4 medium sweet potatoes (I puree the sweet Potatoes with a fork after baking)
1/2 stick butter, softened
1/4 cup sugar
3/4 cup brown sugar
2 eggs, beaten
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/2 teaspoon salt
3/4 cup evaporated milk (5 oz. can works fine)
1 unbaked pie crust

In a medium bowl, beat together butter, sugar, and brown sugar until creamy. Add eggs, vanilla, cinnamon, ginger, nutmeg, allspice and salt. Add evaporated milk and stir mixture into sweet potatoes. Beat together with mixer until smooth and pour into an unbaked pie shell.

Preheated 350* F oven
Bake on bottom rack of oven for 1 hour or until center of pie is firm. Serve warm. Add dollop of whipped cream if desired.

For a great Home made Crust

What a yankee into a southern you gotta to learn to like grits also.
biggrin.gif
Gary I will post recipes for both later. My grandmother also (which I didn't like she made me one plain) would mix in some coconut in her sweet potato pie.

A few years ago something clicked in my head and suddenly I started craving these beta carotene foods that I had always hated as a kid.

I have 5 pounds of Stone Ground Grits in the Pantry. I was send a care package from Georgeanne, The Original Grit Girl. She has an excellent product with great prices. She put Sweet Potato in Grits for her Shrimp and Grits. Spicey and Savory Shrimp over slightly Sweet Grits...JJ

Almost everyone up here hates grits, I don't know why. I grew up liking Cream of Wheat cereal so when I first tried grits at age ~30 I liked them right away.

Georgeanne Ross' can be found with a search of "The original grit girl". There are a couple of videos about her. All her grits are ground fresh to order and are used extensively in the restaurant biz by Chef's in the know...JJ

I don't think I've ever had SP pie. Now I want to try it. No one in my TN family ever made it.

Have y'all had carrot soufflé ? I just found it a few years ago, my wife and I really like it. Last time I made it from recipe found on line "piccalilli carrot soufflé" from Food.com. Have made from several recipes all about the same, don't know if I've found the best one yet. Plan to use Paula Dean's next time. It's excellent with PP or sweet enough to be kinda an after meal treat.
