Strange how things happen.
Now, you southern folk are going to find this hard to believe, but all my life I really thought that there was no such thing as sweet potato pie.
I just thought it was a cute line in a country song. Well lately, I've been hearing more and more about this, and just lately tropics posted about serving sweet potato pie to guests and how much they loved it. I started thinking about the zucchini muffins my SIL makes and thought OK, why not sweet potato pie.
So.........I PM'd Richie and asked him if he would share his recipe. He not only shared, he included a lot of tips and advice, and told me I should combine it with Foam's pie crust recipe. Since I've never been able to make an edible pie crust, I decided to wait til next time on the crust--one thing at a time.
Off to the store for sweet potatos (we call them yams up here) and some Tenderflake uncooked pie shells.
Now Richie had told me that he cut back on the sugar in the recipe, but both Miss Linda and I have pretty large sweet tooths. I decided to make two batches, one with Richie's less sugar, and one with an extra 1/4 cup each of white and brown sugar. I had no Idea how many sweet potatos to cook, so I boiled up lots and froze the excess for quick meals later.
Got the pies all ready and baked. While they were cooling, I whipped up a batch of cinnamon/nutmeg whipped cream.
Side by side taste:
Well I'm here to tell you, it only took one bite of the pie at supper time, and both Miss Linda and I were lost. Sweet potato pie instantly became one of our favorite deserts. It was fantastic!!! Makes me want to cry when I think about all those years I could have been eating sweet potato pie and didn't. As it turned out, both Miss Linda and I preferred the sweeter version, but believe me, none of the second pie went to waste.
My advice? If you've never eaten Sweet Potato Pie--try it, you'll probably like it.
