Last minute Pork Steaks

Been hand cutting steaks when I make sausage . Usually get 3 decent boneless steaks from a butt .
Had these thawed out for today , but yesterday my Son informed me that he wanted to make a pasta dish .
So I decided to get them going for Saturday's supper .

Got out the " hole poker " and worked them over .

Then went back to the 80's and got some zesty Italian ( always in stock in my pantry )

Gave 'em a good soak ,

Then under vacuum for a few hours .

Plan was the 26" kettle , but the SmokeFire always gets the call last minute .
Only bummer was Bear mountain pellets didn't give of much smoke .
Cooked over a drip pan at 225 for a couple hours .
Bumped the heat , and removed the pan .

SBR's brushed on . Getting close .

While that was going , I baked off a couple loaves of bread .

Jalapeno / white cheddar for the meal . Other loaf is for morning toast .

Steaks finished up . Nice char from the open design of the Weber .
Really tender too . Wasn't sure about that , but the marinade and the hold under vac helps .

Daughter made up some pasta salad with pepperoni , motz and tomatoes .
Steamer corn . Came together pretty good for a change in plans .

Opps ! Got a 3rd loaf in the oven this morning . Starting to smell good in here , better go look .

I think I can smell the chops from here! The color is fantastic and just last night we pondered why out daughter doesn't add "extras" to pasta salad. Nice meal!

We usually do the boxed and jazz it up . She did this one from scratch . It was good . I like to get them both included .
 
Those look fantastic! I'm with Steve H Steve H and yourself on the Italian dressing. It makes a great marinade.

A great looking meal. The white cheddar bread sound like a fantastic idea. Good work!

I have not used the method you have for getting the marinade to penetrate that deeply into the meat. I donated the meat poker a long time ago. May need to find another method for that. Also need to get the vacuum container. But it is now on the to-do list.

You can use a fork. If you have the vacuum attachment for mason jars. Then just put the meat in a mason jar, I use the gallon ones. And vacuum seal. Then lay the jar on its side to spread the meat out. Rotate the jar a few times while marinating.

Love me some pork steaks and those look amazing Rich! I always forget about that vacuum attachment for my food saver.

BEAUTIFUL LOOKING STEAKS AND A GREAT JOB ALL AROUND RICH! I HAVE THREE BUTTS IN MY FREEZER I WAS WONDERING WHAT TO DO WITH INSTEAD OF MAKING SAUSAGE. I'M GOING TO COPY THIS AND GIVE IT A SHOT THIS WEEK.

Those sure look great Rich and it's time for some pork steak at my house!
We also keep some dressing on hand for the marinade and adds some nice flavors.
Now I've got to Jaccard the next ones!
