Just got done scarfing this down. I was going to do this for supper yesterday, but was having too good a time and pushed it off until this morning. Marinated a 2+ lb bone in leg steak in an Asian style for what turned out to be about 36 hours. Man was this tasty.

About 10 minutes in on the kettle.

Rested and ready to slice.

A bit more done than I care for, but it was still nice and tender. Some of my world renowned unfocused photography.

Butter lettuce, home made pickled onions and some tomato and basil tortillas.

Not bad for Sunday breakfast! Thanks for looking!

Now this has my attention! Fantastic sounding flavor profile. Care to share the marinade recipe?

Absolutely!

So the leg piece was 2.17 lbs, I scaled this down and changed a few items from a 5 lb recipe I found online.

1/3 C Hoisin sauce
3 Tbs Rice vinegar
1/4 C minced scallions
2-3 Tbs Dark Soy sauce
2 Tbs fresh minced garlic
1 Tbs maple syrup (not the fake stuff)
1/4 tsp sesame oil
1/4 tsp both white and black pepper
1/2 Tbs toasted sesame seeds.

No heating, just mix well and marinade. I removed most before cooking indirect on a very hot kettle. Seared each side for a few moments as not to burn the sugars.

Awesome, this post reminds me of my Dad as he loves lamb/mutton.

Good on you for getting pics… I’d have likely forgotten them and devoured that lamb cook!
