I’ve been under the weather the past few days, but I couldn’t let the holiday weekend pass without a little grill therapy. Chuck roast is on the sale so I grabbed one to throw on the smoker. Yesterday I hit it with some SPOG plus some smoked paprika and a little coffee and let it rest in the fridge overnight. I typically treat them like brisket but this time I’m going for pulled beef. Some of the pictures you guys have posted lately made me want to try it.

Onto the Recteq at 225 for the first hour, then I’ll bump it to 250. Sitting on a rack over a pan of sliced Vidalia onions, jalapenos and a bell pepper with some beef broth. I will probably hit it with some sauce after about 4 hours or so, then into the pan and wrapped up to finish.

I have the 700. Bought it about 5 years ago. Other than having to replace the small rollerblade wheels a couple of times I’ve had no issues with it.
 
It’s not letting me add pictures at the moment. I’ll check back later once it sorts itself out…

After about 4 hours I added some Blues Hog Sizzlin’ Heat sauce, let it go for a 1/2 hour or so then flipped and repeated.

Wrapped at 160 in the pan with the broth and veggies. Let it go until it probed tender, then put the roast in some foil with a ladle of juice and in the oven to keep it warm and let it rest.

Plated with some beans I whipped up and some peas so I had something green on my plate. It was up there with the best chucks I’ve ever done. Girlfriend said it was too spicy for her liking, but she normally isn’t a bean eater and she liked the beans, so I’ll count it as a win!!
