Korean Pork Spare Ribs!

The wife picked up some pork spare ribs for the weekend and last minute she suggested we do them Korean style

so salted them up in prep for some rub.

Then I lightly brushed them with dijon

They were then dusted with a new rub mixture I’m trying out as a compliment to sauces.

the rub:
Light coat salt & Dijon mustard
1/2c sugar
3 Tbs garlic
2 Tbs Onion, lemon Pepper
1 Tbs polo, Cajun
4 Tbs smoked paprika

On they went at 235 the Memphis pellet.

3 hours in looking good and time to wrap.

The wife made up some sweet and spicy Korean bbq sauce.
1/3c gochujang
1/3c ketchup
1tsp Korean red chili
1/4c soy & mirin
4tbs honey
3tbs minced garlic
2tbs sesame oil, brown sugar, grated ginger
1/2 onion & sweet apple (grated)
1/2 tsp black pepper.

I made a bed of sauce to lay them meat side down then a little over the top

my wife made up some sautéed sweet potato glass noodles as a side.

All done 2 hours after the wrap.

this is the first time we have done these this way and all I can say is it will be a regular menu item.

Thanks chiler! The Korean flare sure added to the pork! My wife made a peanut coconut Vinaigrette and it went really well with the fresh fruits!

thanks jcam! I have to say it’s nice to finally have some time to get life back to a little more normal after the move and start creating in the kitchen again.

this was my wife’s chicken tortilla soup that I had for lunch today right before I put the ribs on the smoker. So in a way the soup is/was the inspiration for the presentation for tonight’s dinner. PS. The tomato’s are from the garden that the previous owner had planted before we bought the house.

I love it! Those ribs look delicious and I’d be all over that noodle salad.

Thanks XR! The glass noodles are really cool when you cook them. They come out of the water clear as glass and then they absorb the seasonings as they are sauteed. They go really good with sweet and spicy BBQ sauce!

Thanks yankee! It was just one of those meals that "came" together in a nice way. The BBQ sauce is pretty dang tasty on pork!
