I used B&B charcoal and white oak wood coals.
Sorry I forgot to take a picture of them before I threw them on the fire.
I turned them every 3 minutes until they reached 135* inside.

They turned out great, so tender, flavorful, and expensive!!!

Beef looks cooked perfectly and the salad looks great too! I'm not familiar with ball tips

Oh yeah I love the name on the horseradish sauce - Beaver Cream LOL

Looks great, is that the typical size of a BT? looks to be about 1-1.5lb ea? I know typical trimmed TT here are usually about 2.2lbs.

They are approximately the same size as most T.T.
It's just my wife and me, so I asked for the two smallest they had, they were almost 2lb each, they shrink up a little more than T.T. does when they are cooked hot and fast.

This is one of Kinder's main butcher shops for those of you that would like to see it. It's a block away from the original Concord store.
Their sandwiches are half the size they used to be, and 3X as expensive.
Still really good, not a very good deal anymore. Thanks, COVID!!!

Sirloin . Ball tip comes from the bottom sirloin primal , Tri-tip is in the bottom as well .
I buy knuckles or top sirloin primal . Great cuts of beef in both .

I saw GFS is stocking ball tip now .

And thanks guy's life has been a little jacked up around here lately, my Pop's still isn't doing very well at all, after his knee replacement, he had a stomach ulcer erupt, and he lost 5 units of blood, spent a week in ICU, Pop's is 85 yrs old. The Dr called us in, in the middle of the night because he didn't think the old man would be alive in the morning. By the grace of God he is recovering, but the hits keep coming, they just found out that he has kidney cancer in one of his kidneys. It will have to be removed, but he isn't strong enough for the surgery yet. I'm not sure that he ever will be. Dad was a big strong man, he walked his dog 2 miles a day, today he weighs 140 lbs, and he can hardly stand up with a walker.
This has been super tough on me, so I haven't been cooking much, sorry.

I'm gonna star cooking more for Pop's to try to build him back up for his surgery in May, I pray that it works.

I don't handle shit like this very well, so if I'm a little grumpy, or distant, bare with me please.

Looks Great. Love seeing the Abalone shells. Sad that fishing has been closed so long and looks to be for another 10 years.

Also, love ball tip. Cheaper than TriTip(Atleast it use to be) but very similar in taste and tenderness.

They used to have tee shirt, before the PC nannies took over the world, that had the beaver laying on it's back, and the shirt said -
"Just Spread a little Beaver on it" 🤪🤣🤣

They make all sorts of mustards and sandwich spreads.

Abalone is by far my favorite seafood, where we dove for them is on the TV show "Shark Week" all the time. All the times I dove there, I never saw The Tax Man= Great White Shark.
I haven't had Abalone in over 25 yrs, seems longer, We'd go up to Fort Bragg CA and catch Ling Cod, dig for Pacific Geoduck clams, and dive for Abalone it was awesome, what a feast, and camping on the CA coast is flat out amazing. I used to get most of my Ab's in 25' of water, I was taught to dive for Ab's by two Coast Guard Rescue Swimmers that I met in a parking lot on the coast. No one I grew up with dove for them. So I said screw it and drove up by myself, and sat in the parking lot asking people if I could tag along. The first two guy's I met said "heck yeah, you asked the right guys", they let me shoot two big Ling Cod with their spearguns, then we swam out to a big wash rock in the middle of the cove to dive for Abalone, I got four 8" Ab's in two dives in 20' of water, they were super impress by that. I swam and played Water polo and water skied my whole life and grew up with a pool in the backyard, so I was super comfortable in the water diving!!!
We became super good friends, still are super close with them. I'n return I taught them how to hunt wild hogs, ducks, geese, pheasant, and turkey.

Pacific Geoduck clams. The locals call them "Horse D!ck Clams", I'm not sure why???😜🤣

We would go.to Bragg to dive for Abalone too. Hit north coast Brewing company for clam chowder. Great camping. Just a good time.

The cod was awesome too
