My wife asked me to make another batch of one of the very first sticks I had made.  They were a Kielbasa stick from A recipe I got here on the fourm.  The wife LOVED them and so did I just been trying some new ones lately and forgot to restock on this one!!  I mixed up the meat yesterday and put in the fridge overnight to mellow out (plus it was late).  This morning I stuffed and just hung in the smoker @ 100 to dry out a bit before adding smoke.


10 lbs just getting started.


frying up the last little bit left in the stuffer!!  Mmmmmmm.....these are great!!

Looks like it came out good.

Two tips I might offer: Link your sausage and/or use smaller diameter smoke sticks so that you don't end up with those flat spots where no smoke gets, and usually dries out.  And usually looks unappealing. 

Looks like they didn't shrink up much, good work!  ;)

Thanks for the advice!!  My thoughts were build a bigger smoker!!!  Then I won't have to go around the smoke sticks so many times!!
