Finally invested in one for my KJ Classic… question though, do you take the bottom grate out or leave it in?

From the videos I watched there seems to be no mention of doing anything different other than installing the pan and lining it up with the vent.

I took the grate out. That's the beauty of the basket. It keeps the small chunks from plugging the holes allowing air to flow freely. Basket sits in the bottom of the bowl nicely. You'll love it. It's a game changer.
