Well it's over 90F out with a feels like 100F so what better day to smoke? LOL. My grandsons graduation party is Saturday and he asked me to do pulled pork, my keto cowboy beans and slaw to feed 60 or so people. Pork is done, pulled , vacuum sealed and frozen. Will start thawing it tomorrow in fridge. It's supposed to storm the rest of the week so I needed to get the beans done today. Just not the same if cooked in the oven. Doing a double batch so first up 4 lbs of lean ground beef gets cooked and crumbled.

Next up it's time to cook 4 lbs of chopped up bacon. The 17 inch Lodge putting in the work.

Once the bacons done I reserved some of the bacon grease to do 4 large onions. Man the house smells so good when cooking onions!

Remember the can opener thread? Well that can opener on Amazon called Worlds Best Can opener made in the USA is just that! Used it to open up 7 large cans of Eden Black Soy beans. Here's everything split into the two pans.

Sauce time 4 G Hughes SF BBQ, 26 oz sugar free ketchup . 12 oz tomato paste, 4 cups Brown Swerve, 1 can chipotle in adobo pureed and 3 cups chicken broth. I cut back on the chipotle since it's a larger crowd to feed with some who will surely not like spicy. My buddy works at Heinz and hooked me up with an entire case of the SF ketchup.

All mixed up and split, here's one pan

Into the greatest cabinet smoker ever built. Running 275-300ish. B&B competition logs and cherry chunks.

Smoked for 4 hours or so, stirred every hour. While I was doing that I threw in some chicken thighs, no pics and also some loin chops. Here are the beans out of the smoker ready to cool. Pretty delicious.

Thanks for looking. If anyone wants a cleaner recipe I can link my original post from a few years ago. Most folks who have made them rave about them whether they do keto, low carb, diabetic diet or not.

Looks Great!
My MOM used to make a really good bean casserole, used it in Dad,s last tavern catering.
Very similar, used onions, green peppers, 1 lb bacon raw , added mustard along with the ketchup , brown sugar. very little spices.
But mixed up the beans !
1 Lg can of basic baked beans, 2 cans Kidney beans: Light, dark, red?, Small can of lima beans.
Nice part of it was it was mix of beans that all came together, not just one flavor?
Just a thought?

Beans look killer as usual. The pork and beans going to make some very happy people. Congrats to your Grandson! I guess its time for me to make another batch.

Those look great Jeff!! And I like that SF Hughes sauce. Somebody, or somebodies, are going to be eating good...
Thanks! I've used the G Hughes for a long time. Aside from my beans I now prefer Famous Dave's SF BBQ as my fav. Have you tried it?

Nice job.
Thanks!

So I was reading along on your post and got to this part...

And just wanted to tell you that you now have enough bacon grease for home made baconnaise!! LOL!!
HAHA, you I sure do

soy beans eh?? I must have missed your post from years ago. Tell me more about this....

It sound really interesting.
I designed these beans to fit keto as I really missed baked beans for summer cookouts. The black soy beans are super low carb. 1 cup of the Eden canned has 10 grams of net carbs vs 29 in the same amount of pinto beans. I add all the bacon and burger to further dilute the amount of beans per serving. All the sauces are sugar free so it fills the bill of low carb / keto / diabetic nicely. They are delicious too! Many folks have made them and or eaten them and rave about them. Give them a go.

I like mixed beans like that however they don't fit my diet plan.
I am not on any "diet" but would chow down on those any day of the week.
Thanks Chris! I have a lot of folks who ask for them that aren't doing any diet. My grandson loves them hence the massive amount for his grad party.

Thanks Brian! I froze some of the last batch and although the texture changes a little they were still awesome.

Looks great Jeff ! That's a meal all by itself .
Thanks Rich! Yep they are hearty for sure.
