Well it's over 90F out with a feels like 100F so what better day to smoke? LOL. My grandsons graduation party is Saturday and he asked me to do pulled pork, my keto cowboy beans and slaw to feed 60 or so people. Pork is done, pulled , vacuum sealed and frozen. Will start thawing it tomorrow in fridge. It's supposed to storm the rest of the week so I needed to get the beans done today. Just not the same if cooked in the oven. Doing a double batch so first up 4 lbs of lean ground beef gets cooked and crumbled.
Next up it's time to cook 4 lbs of chopped up bacon. The 17 inch Lodge putting in the work.
Once the bacons done I reserved some of the bacon grease to do 4 large onions. Man the house smells so good when cooking onions!
Remember the can opener thread? Well that can opener on Amazon called Worlds Best Can opener made in the USA is just that! Used it to open up 7 large cans of Eden Black Soy beans. Here's everything split into the two pans.
Sauce time 4 G Hughes SF BBQ, 26 oz sugar free ketchup . 12 oz tomato paste, 4 cups Brown Swerve, 1 can chipotle in adobo pureed and 3 cups chicken broth. I cut back on the chipotle since it's a larger crowd to feed with some who will surely not like spicy. My buddy works at Heinz and hooked me up with an entire case of the SF ketchup.

Into the greatest cabinet smoker ever built. Running 275-300ish. B&B competition logs and cherry chunks.
Smoked for 4 hours or so, stirred every hour. While I was doing that I threw in some chicken thighs, no pics and also some loin chops. Here are the beans out of the smoker ready to cool. Pretty delicious.
Thanks for looking. If anyone wants a cleaner recipe I can link my original post from a few years ago. Most folks who have made them rave about them whether they do keto, low carb, diabetic diet or not.
