Smoked a corned beef yesterday.
Started soaking it Thursday
Rubbed down with Montreal Steak Seasoning, and tossed on the Egg.
It always amazes me how much these things shrink...




Diced up 2 potatos, 1/2 an onion, and a small green pepper. The pepper came from Big Al's garden.




Into a hot pan they went for about 30 minutes, added the diced corned beef...
Plated it up with some wheat toast


Topped with 2 fried eggs. Didn't add any seasoning since there was plenty on the meat. Love the potato to meat ratio on this...

I would love a plate of that for sure 
 
There's a little more left - you have to make your own eggs though...
 
Looks damn good Elly, if ya ever give Big Al the boot, I'd take his place at the dinner table. (and yes, I know it will never happen. )
