Ground Chicken Parmesan stuffed with pepperoni snd mozzarella. The meat mix was close to the same as the Salisbury steak I posted last weekend Added a little extra almond flour to tighten it up and a few T of Italian seasoning. Browned on the Blackstone griddle then baked in the oven. The stuffed 1/2 lbs. patties are covered in a rich marinara with garlic, basil, kalamatta olives and capers. Finished off with Romano, Parmesan and mozzarella cheeses. Topped with some torn basil to serve. Keto / low carb as usual. Here are some pics of today’s food fun.
