Jerky (only because my CB wasn't ready yet and I needed something to smoke on Sunday!)

Safeway had buy one get one free on "round steak".  When I mentioned to the butcher that I was looking for some jerky meat he cut me 5lbs of the top round for the same price!

I drop my pieces into the brine one at a time to be sure they are all getting equal treatment.

 i'm in. can't wait to see the finished pics. i have found if you ask the butcher nicely. he will usually do anything for you. find one butcher. call him by name evertime you walk by. give him a taste of something special that you made. then you have him on your side forever.

Sitting in the smoker now at 115 to dry a little before the AMNPS hits it with the smoke.  More to come!

Looking good! I typically shop at Safeway as it's right by my office. Jon the head butcher helped me out one year with some meat I needed.  I took the whole meat department pulled pork sandwiches. Now even when I just walk through the meat department they want to know what I'm smoking!

At just under 2 hours in I got the AMNPS loaded with one row of hickory and started the burn.  Let it burn for 10 minutes to get a good bed of coals going

I let it smoke for 2 hours.  At the 6 hour mark the I started pulling pieces off that were done

The balance came out at around 7.5 hours.  5lbs of meat pre-cure turned into 2.85 pounds of smokey dry goodness!
