Going to smoke leg thigh chicken quarters in 2 days.  I found some jerk rub hiding in my cabinet from Jamaica that I bought while I was there a while back. I forgot I had it. Has anyone tried it? I ate some local Jerk chicken when I was there and it was out of this world.

This is my first time smoking chicken so if anyone has some input I would be grateful.

I gather you smoke to 170 degrees and not by time?

Set about 240 degrees on MES?

Hugs to all my new smoke brothers!

I use a jerk seasoning from Spice Island.  Love it.

Yes, crank up that MES.

I have tried a few dry seasoning mixes but some years back l had a Jamaican student that I worked closely with to pass her third attempt at Food Safety Certification. My thankyou was her family's Wet Jerk Marinade recipe that is very good. I did sub Jalapeno for the Scotch Bonnet Chilies as my mouth could not handle the burn. Legs to 170 will be juicy and tender. Good luck with the cook...JJ

there is a BBQ  joint in Toronto that does an awesome jerked smoked chicken  halfs called smoke signals bbq  good luck  post some pics hope it turns out fantastic !

The results are in with the Jerk style chicken quarters.  I did marinate with Allegro's for a few hrs before I put them on.  I realized the Jerk rub was a little bit too spicy for my taste. The outcome was still wonderful according to my critics (family).

Bon Appetite

Tks for all the tips smoke dudes!

Great looking quarters!  I love the way Jerk chicken looks, but can't stand the taste!  I'm strange, I have tried it in many restaurants and even made my own on my grill...hated them all!  My mind still tells me it is something that I should like, so I continue to try it.  Yours has my mouth watering, I really wish I liked it!

Thank you !  Funny stuff Mike, you just haven't had the right cook I suppose. The best jerk chicken I ever had was a roadside stand in Jamaica.  Not to bang my own drum but these were pretty decent as well.
