So if you haven't heard me mention it before I won an electric grill in a raffle at a chili cook off I competed in. I was gonna sell it but found out my apartment lets you have electric grills so I said why not keep it. It serves me somewhat of a purpose like grill marks and a decent char but I still miss the fire flavor. I had read in the manual you can put wood chips directly on the grates and it just so happened my long awaited shipment of pimento wood chips and charcoal just arrived so I was in the mood for my dry rubbed jerk chicken fajitas. Excuse the pictures it was dark so the light for the most part was from a small flashlight and taken with my phone. On with the show.....
Finally got some pimento wood chips, couldn't find chunks. I also got pimento lump charcoal. It's expensive but the flavor is totally unique. If you don't know what pimento wood is, it is also known as allspice, the wood has the same scent as the berry which when ground is the allspice you buy in jars. You can see in the picture where I ordered it from. It is the only place I have seen import it.
I use a dry jerk rub for the fajitas (wet for authentic jerk). Let it sit in the fridge for at least an hour so the spices work in the meat a little.

Chicken started next to the chips with the cover closed then finished directly on top of the chips. No smoke ring but it sure imparted the flavor of true jerk. It took me a while to find pimento wood but thats what they cook on in Jamaica so now I am very happy. The wood sure makes a difference.
Final product cut up then topped with jack cheese, grilled peppers & onions, lettuce, tomato, sour cream, and a squeeze of lime juice.
This was my wife's fajita, she likes the lettuce but trust me there is a lot of chicken under there.
