I make these treats all the time and post now and again as a reminder for folks .They are easy to make and tasty! Simple ingredients:

Chop up your jalapenos and set aside ,mix the venison(or a lean beef burger) with the hot Italian well. Mix again with the jalapenos and then one more quick mix with the cheese.

I use one pound of venison or beef and one pound of hot Italian and always get 13 meatballs .I make up my cream cheese balls and meatballs at the same time trying to keep everything fairly equal:( I even got my feet in this pic! :) )

Make a dimple in the meatball and try to center the cream cheese ball ,roll and form tightly:

Pick your favorite rub and give each meatball a good roll:

Smoked for 2.5 hours at about 225* with cherry chips:

Nice looking, do you find that there is a lot of heat from the peppers and the sausage
on my to do list with beef though, not a big deer fan , but wife loves it

DRKS, Very little heat from those ingredients. You would have to jazz it up with some cayenne/red peeper flakes etc. if you wanted more heat. I sometimes make them with 90/10 ground beef instead of venison and they are yummy.
