Mrs Scar and I have been wanting some of our favorite Jamaican Jerk wings for a while now and since I had the smoker going with a chuckie and some burger for making chili (another thread) we decided to make some wings to go with the chili
Trimmed all the tips off and used them for stock
All the spices in the processor - recipe to follow
Pour the marinade onto the chicken shake it up real good to distribute well and into the fridge to marinate for about 3 hours
Here we are after 3 hours in the smoker at 225 with some pecan then onto the grill for about 5 minutes to crisp up the skin
We really like this flavor combo and I will add another habanero next time for more heat

Hot and spicy, with a wildly sweet and smokey aroma! It is wonderful on pork, chicken and seafood. This recipe is intended for rotisserie or indirect grilling methods but can also be used for roasting meats in the oven.

- 3 tablespoons fresh thyme
- 2 tablespoons fresh gingerroot, about 1 . 1/2 inches
- 2 tablespoons ground allspice
- 1 tablespoon black peppercorns
- 2 tablespoons soy sauce
- 2 tablespoons oil
- 1 tablespoon vinegar
- 2 tablespoons pineapple juice
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 2 teaspoons salt
- 2 bunches green onions
- 2 fresh scotch bonnet peppers or habanero peppers
- 6-8 garlic cloves, depending on size
- 2 fresh [color= rgb(0, 0, 0)]limes, juice of [/color]
