Put a smoke on 12 lbs summer sausage and 10 lbs brats today. The brats look like heck, but the actually are goood. 6 hours was a little long on the brats but the summer sausage rocks.

sprky, they are dark, first time to do brats, used natural casing. Its vineson. it did turn out very good as for the meat. The casing s look like hell actually. It was very good with saurkrout and the beer bread.

The summer sausage looks great.  The brats do look dark, but if the flavor was on, the presentation sure wouldn't hurt my feelings?

Venison...... hence the dark color........ Looks awesome 51................nothing wrong with that..... bet they were great..........
