Am I right that collagen is edible, and cellulose is not (and is removed on something like a hot dog)?

Collagen casing are edible and bareley noticable in "the bite" if you buy an quality casing. Cellulose are inedible but smokeable.

NICE! Added to the never ending list of things to try someday. I wanted to ask, does the PS mix taste like real slim jims with jalapeno? Or maybe it's just a nickname for snack sticks here. I ran Rick's SJ recipe once and it is actually fairly close. I LOVE Tabasco Slim Jims and dead set on replicating.
